CHANOYU EXPERIENCE
(Tea Ceremony Class)

We teach ongoing weekly classes in the Urasenke tradition of Chanoyu from beginner to advanced levels. Please visit our Chanoyu class and enjoy a first hand experience at being a guest. This is a great introduction for those interested in learning more about weekly tea study. Private tea lessons are also available. ZEN TEA CEREMONY EXPERIENCE
Fee $75 per person


An introduction to the Zen choreography in making a bowl of tea. Participants will have guided practice in all of the steps necessary to prepare a tasty bowl of matcha, powdered green tea, with an open mind and pure heart. (Please contact us to arrange date and time.)

KAISEKI COOKING WORKSHOP

This early autumn kaiseki workshop will feature 3 dishes, and rice, including: heirloom tomato, tofu & avocado salad, edamame gomadofu (sesame custard with green soy beans), yakinasu (grilled eggplant) & grilled shishito peppers and kinoko gohan (mushroom rice) Ichiban dashi soup stock will also be made using konbu (kelp) and katsuobushi (shaved dried bonito). The class will be mostly demonstration, with some hands-on arranging, and participants will be able to sample the dishes that are prepared. Easy to follow recipes will be provided    Japanese Cultural Community Center in 1840 Sutter St., SF (415-567-5505).


KOHDO & CHANOYU
(incense and tea)

This workshop will feature incense as it is enjoyed in the tearoom. There will be a demonstration of how to prepare a censor using the various traditional incense utensils. Participants will enjoy 2 varieties of kyara, the best of the aged aloes wood incense. They will also have a chance to write a seasonal poem related to the incense. Traditional sweets and tea will also be served.



TSUKIMI TENSHIN TEA
(Moon Viewing Tea)

Jusanya, the late autumn moon, will be celebrated during this tea gathering. The autumn moon was celebrated in China as early as the Han Dynasty (206B.C.-24A.D.) and was popular from the 10th century in Japan. In Kyoto, the Osawa Pond of the Daikakuji Temple is one of the most renown places to view the autumn moon. Jusanya is referred to as kurimeigetsu or the chestnut moon. Guests will enjoy seasonal sweets, tea and a kaiseki style tenshin meal. No prior experience is necessary.


WAGASHI
CLASS
(sweet making)

This traditional wagashi Japanese sweet making class will feature oribemanju and ukishima, (a light refreshing sweet made with sweet bean paste and egg whites). Oribemanju is a steamed sweet with a wheat flour outer skin covering sweet red bean paste. It will have colors reminiscent of the colors in Oribe ceramic ware. The freshly made sweets and tea will be served at the end of the class. Easy to follow recipes will be provided

This winter kaiseki workshop will feature chilled seared wild sea scallops, steamed white fish in a fragrant kuzu thickened flavored soup, subasu (sweet sour lotus root) and sekihan (steamed sweet mochi rice and azuki beans [aka "Happy Rice"]). Ichiban dashi soup stock will also be made from scratch. The class will be mostly demonstration, with some hands-on arranging, and participants will be able to sample the dishes that are prepared. JOYAGAMA
(final gathering)

Joyagama, our final tea gathering of 2015, is a time to share tea with friends and enjoy the memories of the past year and looking forward to the New Year. Utensils reflecting the feeling of the season will be used during this tea. Joyagama is traditionally held on December 31, in Japan. Toshikoshi, year passing festivities, include the eating of toshikoshisoba, long thin buckwheat noodles, for longevity and good health. Traditional sweets, tea and toshikoshisoba will be served. This tea is open to anyone who wants to experience Japanese culture through Chanoyu, the tea ceremony.
